Carlos Echeandia, the owner of Carlos’ Bistro in Colorado Springs was found guilty Wednesday of 3 counts of sexually assaulting a woman who worked at his restaurant. The woman was a waitress trainee and the two had known each other for some time. Prosecutors say they were alone in the restaurant on a March morning in 2025 when Echeandia asked her to take her top off. She agreed on the condition he would not touch her. Both had been sampling drinks that morning and the woman according to reports was intoxicated. She then says Echeandia sexually assaulted her. He will be sentenced later this year.
